Dominio de Atauta
The valley of Atauta is a region of Soria, located on the eastern side of the Ribera del Duero, with a long viticultural history. This tradition is manifested by its old winery quarter which is now in ruins. They were built into the limestone soil some five or six hundred years ago. More than a hundred of these family cellars, with their beams and wine presses, bear testimony of that winery tradition that has now declined. Inside, the force of gravity is used to displace the grapes, juices, and wines from the top floor, where the harvested grapes arrive, to the bottle racks on the ground floor, passing through the production vault and the cask cellar. The wine is fermented in concrete tanks and then aged in French oak barrels for 18 months. Bottled unfiltered.
