La Luna Ensamble Chino Manso Sahuayo
Aromas of white pepper, honeydew melon, citrus oil. Silky sweet texture with hints of fresh picked herbs and a pleasant salinity. Medium finish with lingering toasted marshmallow. Beautiful expression produced from 62% Chino and 38% Manso Sahuayo agave. Cooked together in our conic earthen ovens for 240 hours, rested post cook for 72 hours, macerated by hand w/ mallets & axes, fermented in open air pinewood vats for 168 hours before being double distilled in our copper caso and pinewood stills and bottled at still strength, 97.02 Proof.
