Rezpiral Espadin de Mojo from Alejandrina & Nicolas Hernandez is produced in the small community of Rio Seco near Zoquitlan, Oaxaca. Nicolas & Alejandrina Hernandez are husband and wife. They cook their agave in an underground volcanic-lined oven. They shred the agave in a mechanical mill and ferment the crushed agave in cypress vats. The agave is then double distilled in copper pots.
